Saint Patrick's Day

  • 3cl Irish whiskey
  • 3cl green crème de menthe
  • 3cl green Chartreuse
  • 4 drops Angostura bitters

Pour all ingredients into a shaker with ice. Shake. Strain into a cocktail glass.

Sake Cosmopolitan

  • 3cl lemon sake
  • 1.5cl Cointreau
  • 3cl cranberry juice
  • 1.5cl fresh lime juice
  • 1cl gomme syrup

Pour all the ingredients into a shaker with ice. Shake. Strain into a cocktail glass. Garnish with an orange twist.

Sake Margarita

  • 3cl sake
  • 3cl orange curaçao
  • 3cl fresh lime juice

Rub a wedge of lemon around the rim of a cocktail glass. Dip it into a saucer of fine salt.

Pour all ingredients into a shaker with ice. Shake. Strain into the glass. Garnish with a wedge of lime.

Salty Dog

  • 4cl vodka
  • 4cl fresh grapefruit juice

Rub the rim of a cocktail glass with a wedge of lemon. Dip it into a saucer of fine salt.

Pour the vodka and the grapefruit juice into a shaker with ice. Shake. Strain into the cocktail glass.

Sal's Sinner

  • 2cl cognac
  • 2cl green crème de menthe
  • 2cl white crème de cacao
  • 2cl double cream
  • 2 dashes Tabasco sauce

Pour the crème de menthe and white crème de cacao into a mixing glass with ice. Stir. Strain into a cocktail glass. Pour the cream and cognac into a shaker with ice. Shake.

Gently float this mixture over the back of a barspoon to lay it on top of the green mixture. Add the Tabasco sauce. Garnish with a slim chocolate mint stick.

San Francisco

  • 6clvodka
  • 1.5cl triple sec/Cointreau
  • 1.5cl crème de bananes (banana liqueur)
  • 8cl fresh orange juice
  • 8cl pineapple juice
  • 1cl grenadine

Pour all ingredients into a shaker with ice. Shake. Strain into a highball filled with ice. Garnish with a wedge of lime.

Sangria

Serves 4

  • 1 bottle Spanish red wine
  • 12cl Spanish brandy
  • 3cl triple sec/Cointreau
  • 2 teaspoons caster sugar
  • 1.5cl fresh lemon juice
  • 1.5cl fresh orange juice
  • half each : apple, orange, lemon, and lime, sliced
  • soda water (optional)

Pour all ingredients, except soda, into a pitcher or punch bowl, starting with the sugar. Stir to dissolve sugar. Leave to marinate in the refrigerator for a few hours before serving. When guests arrive, add the slices of lemon, orange, lime, and apple. Add large ice cubes and soda. Serve in goblets.

Saronno Imperial

  • 3cl amaretto
  • champagne

Pour the amaretto into a champagne flute. Top up with champagne. Stir gently. Garnish with a twist of lemon.

Sazerac

  • 5cl bourbon
  • 1cl Pernod
  • dash Peychaud bitters
  • dash Angostura bitters
  • 1 white sugar cube
  • dash soda water

Place a sugar cube in an old-fashioned glass and soak with the Angostura and Peychaud bitters. Add enough soda to cover the sugar and crush it with the back of a barspoon. Add the bourbon. Stir. Float the Pernod over the top. Garnish with a twist of lemon.

Screwdriver

  • 5cl vodka
  • 15cl fresh orange juice

Pour the vodka into a highball filled with ice. Add the orange juice. Stir. Garnish with a slice of orange. Serve with a stirrer.

Sea Breeze

  • 5cl vodka
  • 10cl cranberry juice
  • 5cl fresh grapefruit juice

Pour the ingredients into a highball filled with ice. Stir. Garnish with a wedge of lime. Serve with a stirrer.

Sensual Sip

  • 3cl brandy
  • 3cl Kahlua
  • hot chocolate
  • whipped cream

Pour the brandy and Kahlua into a heatproof toddy glass. Add the hot chocolate to three-quarters full. Stir. Float the whipped cream on top. Stir with a chocolate stick. Be quick about it, because it will melt.

Serenissima

  • 3cl Campari
  • 3cl vodka
  • 3cl fresh grapefruit juice

Pour all ingredients into a shaker with ice. Shake. Strain into a cocktail glass. Garnish with a twist of orange.

Sex on the Beach

  • 3cl vodka
  • 1.5cl peach schnapps
  • 1.5cl Chambord liqueur
  • 5cl fresh orange juice
  • 5cl cranberry juice

Pour all ingredients in a shaker with ice. Shake. Strain into a highball filled with ice. Garnish with a slice of lime.

Sexual Healing

  • 5cl Stolichnya vodka
  • 1.5cl Cointreau
  • 2 stalks of redcurrants, de-stalked
  • 2 to 3 slices of ginger root, peeled
  • 1.5cl fresh lemon juice
  • half teaspoon clear honey

Muddle the ginger and the redcurrants in a shaker to release the flavours. Add the remaining ingredients and ice. Shake well. Strain into a cocktail glass. Garnish with a small sprig of redcurrants on the rim.

  • 5cl Grand Marnier
  • hot chocolate
  • cinnamon stick
  • Pour the Grand Marnier into a heatproof toddy glass. Add the hot chocolate. Stir with a cinnamon stick for the full flavor.

  • 5cl silver tequila
  • 2cl white crème de cacao
  • 3cl double cream
  • dash grenadine
  • Rub a wedge of lime around the rim. Dip it into a saucer full of grated cinnamon.

Raffles Singapore Sling

  • 2cl gin
  • 2cl cherry brandy

Pour all ingredients into a shaker with ice. Shake. Strain into a highball filled with ice. Garnish with a slice of pineapple and a maraschino cherry. Serve with a straw and a stirrer.

Singapore Sling

  • 4cl gin
  • 2cl cherry brandy
  • 2cl fresh lemon juice
  • soda water

Place all ingredients, except soda, into a shaker with ice. Shake. Strain into a highball filled with ice. Top up with soda. Stir. Garnish with a slice of lemon and a maraschino cherry.

Sky Dog

  • 4cl silver tequila
  • 1.5cl Cointreau
  • 1.5cl fresh lime juice
  • 1.5cl cranberry juice
  • 1.5cl pink grapefruit juice

To prepare a cocktail or Margarita glass, rub a wedge of lime around the rim to moisten it. Dip the rim into a saucer of fine salt. Pour all ingredients into a shaker with ice. Shake. Strain into the glass. Garnish with a wedge of lime.

Slippery Nipple

  • 1cl grenadine
  • 2cl white sambuca
  • 2cl Irish cream liqueur

Pour each ingredient, in the order listed, over the back of a barspoon into a shot glass.

Sloe Gin Fizz

  • sloe gin
  • 1cl fresh lemon juice
  • dash gomme syrup
  • soda water

Pour all ingredients, except soda, into a shaker with ice. Shake. Strain into a highball and top up with soda. Garnish with a slice of lime. Serve with a stirrer.

Slow-Hand Lover

  • 1cl silver tequila
  • 2cl dark rum
  • 1cl Tia Maria
  • 2cl coconut cream
  • half fresh banana
  • 6cl pineapple juice

Pour all ingredients, except dark rum, into a blender with a scoop of crushed ice. Blend. Pour into a colada glass. Float the dark rum on top. Garnish with a Cape Gooseberry. Serve with a straw.

Snowstorm

  • 3cl vodka
  • 1.5cl limoncello
  • 1.5cl white crème de cacao
  • 1cl Orgeat (almond) syrup
  • 3cl double cream

Pour all ingredients into a shaker with ice. Shake. Strain into a cocktail glass. Garnish with a stem of red currants dipped in lemon juice and then in caster sugar. This gives a shimmery effect to the cocktail.

Sombrero

  • 3cl golden tequila
  • 3cl brown crème de cacao
  • 3cl double cream

Pour all ingredients into a shaker with ice. Shake. Strain into a cocktail glass. Garnish with a sprinkling of grated nutmeg.

South Pacific

  • 3cl gin
  • 1.5cl Galliano
  • 1.5cl blue curaçao
  • lemonade

Pour the gin and Galliano into a highball filled with ice. Stir. Add 7Up to almost three-quarters full. Pour the blue curaçao into the drink and let it sink to the bottom of the glass. Place a barspoon in the glass. Twist it just enough to disturb the curaçao, which will gently rise and merge with the Galliano. Garnish with a slice of lime on the rim. Serve with a straw.

Special Americano

  • 3cl Campari
  • 3cl sweet red vermouth
  • 3cl gin
  • 3cl fresh orange juice
  • soda water

Pour the Campari, vermouth, gin, and orange juice to a highball filled with ice. Stir. Top up with soda. Stir. Garnish with a spiral of orange and lemon peels.

Spice Sensation

  • 3cl cognac
  • 1.5cl yellow Chartreuse
  • 1.5cl Bénédictine
  • 1.5cl Cointreau
  • 2 dashes Angostura bitters

Pour all ingredients into a mixing glass with ice. Stir. Strain into a cocktail glass.

  • 5cl bourbon
  • 2cl amaretto
  • 2cl fresh lime juice

Pour all ingredients into a shaker with ice. Shake. Strain into an old-fashioned glass filled with ice. Garnish with a wedge of lime.

  • 5cl brandy
  • 2cl white crème de menthe

Pour the brandy, then the crème de menthe, over ice in an old-fashioned glass. Stir. Serve with a stirrer and a glass of ice water on the side.

Stomach Reviver

  • 3cl Fernet Branca
  • 3cl brandy
  • 3 dashes Angostura bitters

Pour all ingredients into a shaker with ice. Shake. Strain into a shot glass.

Strawberry and Basil Fizz

  • 5 fresh strawberries
  • 2 fresh basil leaves
  • dash gomme syrup
  • prosecco or champagne

Put the strawberries in a blender with the basil leaves, gomme syrup, and a drop of prosecco. Blend for 10 seconds. Mash through a strainer and then chill for an hour. Pour enough mix to fill one quarter of a champagne flute. Top up prosecco. Stir gently. Garnish with a strawberry and a basil leaf.

Strawberry and Basil Martini

  • 6cl vodka
  • 3 to 4 fresh strawberries
  • 1 to 2 fresh basil leaves

Pour all ingredients into a shaker with ice. Shake. Strain into a cocktail glass. Garnish with a strawberry and a small sprig of basil leaves.

Strawberry Fetish

The taste of strawberries and cream wrapped up in one creamy cocktail.

  • 5cl strawberry schnapps
  • 2cl Frangelico
  • dash grenadine
  • 3cl double cream
  • soda water

Pour all ingredients, except soda, into a shaker with ice. Shake. Strain into a highball filled with ice. Top up with soda. Stir. Garnish with a strawberry.

Summer Scene

  • 4cl white rum
  • 1cl blue curaçao
  • 7cl mango juice
  • 7cl pineapple juice
  • 2cl Roses's lime cordial
  • 1cl fresh lemon juice

Pour the pineapple, mango, and lemon juices, and lime cordial into a highball filled with ice. Stir until a coral color develops. In a mixing glass, pour the white rum and blue curaçao and stir until well combined. Pour this mixture over the back of a barspoon so it floats on the fruit juices. Garnish with a slice of star fruit on the rim. Serve with a stirrer and two straws.

Sundowner

  • 3cl brandy
  • 1.5cl Van der Hum
  • 3cl fresh orange juice
  • 1.5cl fresh lemon juice

Pour all ingredients into a shaker with ice. Shake. Strain into a cocktail glass. Garnish with a maraschino cherry and a slice of orange.

Sunny Dream

  • 2cl Cointreau
  • 4cl apricot brandy
  • 5cl fresh orange juice
  • 2 scoops vanilla ice cream

Put the ice cream in the blender and add the remaining ingredients, along with half a scoop of crushed ice. Blend. Pour into a goblet. Garnish with a maraschino cherry and a sprig of mint. Serve with a straw.

Sweet Breeze

  • 3cl brandy
  • 1.5cl Cointreau
  • 1.5cl peach brandy
  • 6cl fresh orange juice
  • dash grenadine
  • dash champagne

Pour all ingredients, except champagne, into a shaker with ice. Shake. Strain into a highball filled with ice. Top up with champagne. Stir. Garnish with a wedge of peach and a stem of red currants.

Sweetheart

  • 3cl vodka
  • 4cl Aperol
  • 2cl limoncello
  • 2cl fresh lemon juice
  • 10cl cranberry juice

Put all ingredients into a shaker with ice. Shake. Strain into a highball filled with ice. Garnish with a stem of red currants on the rim of the glass, beside a small sprig of mint.

Sweetie

  • 3cl vodka
  • 2cl Campari
  • 2cl limoncello
  • 2cl fresh lemon juice
  • 9cl cranberry juice

Pour all ingredients into a shaker with ice. Shake. Strain into a highball filled with ice. Garnish with red currants.

Sweet Sue

  • 3cl cognac
  • 1.5cl Kahlua
  • 1.5cl Frangelico (hazelnut liqueur)
  • 1.5cl limoncello
  • 1.5cl double cream

Pour the cognac, Kahlua, and Frangelico into a mixing glass with ice. Stir quickly. Strain into a cocktail glass. Pour the limoncello and cream into the shaker. Shake. Float this creamy mixture over a barspoon to create a layer over the cognac mixture.

Using a peeler, grate shavings of semisweet or milk chocolate directly over the glass onto the creamy layer.
